Ok so since I've started working out in the summer I have lost a bit a weight and eating healthier, but i don't have a true diet.

This is what an average weekday looks like for me:

5:30-(wake up) Nothing
7:30-(post workout/aerobics) Protein Shake: 1 3/4 Cup of Mootopia Milk + 1/2-Full scoop Bluebonnet Whey Protein Isolate (depending on the day) and a whole green bell pepper
(here is where i know i need to make a change
9:00-4:15(school day) I have absolutely nothing at all other than water because i refuse to eat the school food. I pocket around $50 a month for lunch money so if there was anything i could buy daily for a mid day meal, let me know.
4:50-(when i get home) Canned chicken (drained) and a piece of fruit or two
7:00-(dinner) Varies daily since i don't have much of a schedule, but i try to keep it high in protein.

So that's an average weekday for me and I'm pretty sure it needs a bit of work.

I of course want to gain muscle, but how do I know if I am eating enough or not enough how long should I give it? I plan on eating about 3000 calories. My BMR is 2000 and I will be going to th gym 4-5 days a week.

Hay, I have been trying to gain mass around my arms, and reducing fat in the abs whilst trying to main my muscle in other areas. I have been trying to do this on a zone diet(40%carb, 30% pro, 30% fat) for a few weeks but results haven't been as encouraging so far. Does anyone know whether zone diet will work for these aims or what other diet i should be looking at to achieve these goals?

Next week is the Thanksgiving holiday where I live, in Canada. I picked up an issue of Clean Eating Magazine this week which featured a "clean holiday feast" for 10 people. Here is the dessert recipe they have, it's a pumpkin mousse that is quick to whip up the night before. I just made a test batch and it's not bad at all. If you're not re-feeding on Thanksgiving it would be a great alternative to pumpkin pie with whipped cream.

Spiced Pumpkin Mousse

30 oz. pure pumpkin puree
1 pound soft/silken tofu
1/2 cup pure maple syrup
1 1/2 tsp cinnamon
3/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves, ground
1/4 tsp sea salt
1/4 cup non-fat plain Greek style yogurt
1 oz. dark chocolate cut into shards

Blend the pumpkin puree and tofu together with a food processor or mixer. Add spices, salt, and syrup. Blend together again. Put mixture in tupperware and chill for 4 hours in the fridge, or overnight. Dish a 1/2 cup serving of the mixture into 10 small dishes or shallow glasses and top with 2 tsp of yogurt and 1 tsp of chocolate.

Alright. If I don't get personal on this board soon I will just fade away into the background and let all of my dreams of obscene hypertrophy crash and burn!
This is step #1: my food. Please help me out and let me know what you would do differently.

Meal #1
3/4 cup oatmeal
3/4 cup fat free cottage cheese
500 ml water

Meal #2
3/4 cup frozen mixed berries
3/4 cup fat free cottage cheese

Meal #3
5 oz. chicken breast
1 green pepper
1 medium sized baked potato (with black pepper)
500 ml water

Meal #4 (post-work out)
Protein and carb shake (Muscle Milk, choc mint)
1 litre water

Meal #5
2 eggs
1 medium sized baked potato
1 serving raw vegetables (cucumbers, celery, broccoli, etc.)

Meal #6
1 medium sized apple
2 tbsp natural peanut butter
250 ml herbal tea or water

Some other info... during work outs I drink a BCAA supplement, and I switch between chicken and salmon for #3, and eggs and bison for #5. I have a scheduled "re-feed" every week for 2 hours where I eat other things... like a pizza, or a freaking pint of Haagen-Dazs. I work out 6 days per week. Thanks for reading... the stickies were really helpful in making adjustments to date.
