Dice chicken up so each piece is equal in size, make sure they are small pieces (the bigger the pieces, the harder it will be to get them tender). Sprinkle the Red Pepper, chili powder, and Habanero sauce (not wing sauce) on the chicken before you drop it in the pan...
Set the pan on a burner, turn the burner on HIGH and lightly spray the pan with PAM (I use olive oil spray). After the pan reaches its temperature, drop the chicken in (if it doesn't sizzle immediatly, you didn't let it get hot enough--it should be right before the pam starts to turn brown).
Be sure to continuously stir the chicken around in the pan. with 12 ounces of chicken, it usually takes about 5 minutes to cook through...just don't let it sit without stirring or you will burn it. As soon as its cooked, take it off the burner and set it aside. lightly pour Olive oil and Wing Sauce over chicken, close the lid and shake to cover. Let the chicken sit in the pan with the lid on for 5 minutes.
I promise, if you like extremely spicy chicken this will not disappoint.
I put it in a tortilla shell most of the time, but it is amazing by itself or with brown rice as well...I forgot the name of the tortillas I use, but they are on the small side and made with Oat Flour...For some reason Meijer keeps them by the lunch meat and cheese instead of in the bread or health-food isle.
