I found the chicken fingers recipe in Clean Eating Magazine
2 Boneless, skinless chicken breasts
1/2 cup almond or skim milk
1 tbsp Dijon mustard (I use honey mustard)
1/4 cup sliced almonds
1/4 cup rolled oats
1/2 cup whole wheat bread crumbs
1 Tbsp dried parsley flakes
1/2 tsp ground black pepper
1. Preheat oven to 375 and spray a baking sheet w/ olive oil cooking spray
2. Trim fat from chicken and cut into strips
3. Stir milk and mustard together, in a seperate bowl combine almonds, oats, bread crumbs, parsley and pepper.
4. Dip chicken into milk then roll in dry mixture and place on baking sheet.
5. Bake for 14-16 min turning once, or until chicken in cooked through.

Above is the info from the magazine. I found their baking time to be way off- I made these bite sized as finger food for a meeting yesterday and it took about 20min to cook. Usually I'll take a partly thawed large breast and divide it into 3 pieces and it takes close to an hour to cook. They suggest serving it w/ sweet potato fries:
1 Sweet potato, chopped to resemble fries or wedges
1 egg white
cinnamon and splenda or cayenne pepper
1. Preheat oven to 400 and spray a large baking sheet w/ cooking spray.
2. Place fries, egg white, and spices in a large ziploc bag and shake to evenly coat.
3. Arrange on baking sheet and bake 30-60min depending on how many fries you have.
I can't remember where I found this recipe at but I make these at least once a month!
